Thai Peanut Sauce


Thai peanut sauce has just a small kick to it, which works well with the rich creamy texture of the sauce. This sauce is dairy free and gluten free and makes a good addition to any favorite dinner food. Add it to your rice, your chicken, your beef, your vegetables, and so much more!


Thailand is known for having some of the best fruit in the world as well as being the world's leading farm product producers. Fresh food is abundant in Thailand and gives natives a much healthier diet than many other places around the world. Thailand spices are found in plentiful amounts. Pacific islands and Asian countries are well known for their flavorful foods and cultural dishes. A flavorful ingredient used in Thailand that is found in curry paste is lemongrass. Lemongrass is a grass just as the name describes, with a citrus aroma and lemony taste. Thailand's growth of coconuts and peanuts gives them local sources of healthy fats to include in their diets. As an added plus, being that Thailand is the the number one rice producer in the world, rice is a staple food in natives diets. Americans are having increased dietary issues and have been for many decades. Celiac disease and gluten intolerance are most common in the United States and European countries. The people of Thailand as well as many other Asian countries hardly face gluten issues like the Unites States, because gluten is not as big of a part of their diets. Rice is a starch-cereal grain that does not have gluten and is often used as a bread or gluten substitute. Having rice as a staple food in their diets, is yet another reason why the people of Thailand make up a healthier population in terms of diets and dietary needs. Try this yummy Thai inspired sauce over your rice, meat, or veggies, and think of the healthy but delicious choice you are making!


Ingredients:

1 can of unsweetened coconut milk

3/4 cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon lime juice (fresh squeezed)

1-2 tablespoons red Thai curry paste

1 tablespoon brown sugar

1 clove garlic, minced

1 tablespoon water


Directions: Yield 3-4 cups



-Mince garlic

-Squeeze lime until 1 tablespoon of juice can be extracted

-Place a medium or large pot on the stove top with the tablespoon of water on medium heat

-Once heated, add in peanut butter, 1 tablespoon red Thai curry paste, and coconut milk; stir until smooth and well combined

*use 3/4 cup coconut milk if you want a thicker sauce

-Add in all other ingredients

-Stir continually for 5-10 minutes, until smooth and creamy

- Add in additional tablespoon of curry paste if more spice is desired

*I use 1 1/2 tablespoons of curry paste in total

-Take off heat and serve over meal or use as dip

-Enjoy!
