Norwegian Pancakes (Pannekaker)



Norway is a Scandinavian country known for its mountain covered land, beautiful architecture, the origin of Vikings, a love of coffee, and the great outdoors. Of course, there are many special Norwegian foods too. Heart shaped waffles, brown cheese, smoked salmon, reindeer, and a traditional lamb and cabbage stew. There are many traditional breakfast foods that Norwegians enjoy with their coffee. Christmas and Easter are two of the many celebrated holiday's in Norway, and include traditional breakfast foods. Pannekaker are Norwegian pancakes very similar to French crêpes. However, in Norway you will find these thin pancakes filled with butter and sugar or homemade jams or preserves. Lingonberries are special seasonal berries not often seen or used in America, but commonly grown and eaten in Norway. Lingonberry jam is the perfect thing to spread inside of a pancake. Really, any sweet jam fits right inside these delicious pancakes, to make the perfect breakfast treat!


Ingredients:


4 large eggs

1/2 cup warm water (about 80 F degrees)

1/3 cup granulated sugar

1/3 cup melted butter

1 1/4 cup all-purpose flour

1 cup milk (fat-free, 2%, soy, almond, coconut, etc.)

1 teaspoon vanilla extract

Berry jam or preserves


Directions: yield 10-20 Pancakes



-In a large bowl, whisk together eggs, water, and vanilla

-Slowly add in sugar, flour and milk; while continuing to whisk

-Pour in melted butter and whisk until all ingredients are completely combined and no large pieces remain

-On medium heat, lightly butter a griddle or skillet pan

-Pour 1/4 cup of batter on griddle/skillet and let cook for 1 minute, then flip and let cook on other side for another minute

-Take off heat and spread a thin layer of jam or preserves on one side of pancake

*jam and preserves will not spread if the pancake is too hot, wait a minute or two before spreading


-Roll the pancake into a long roll

-Repeat 1/4 cups of batter, spreading jam/preserves, and making rolls until all batter is used

-Serve with extra jam/ preserves on top or a sprinkle of powdered sugar

-Enjoy!
