Sweetest Softest Sugar Cookies




As a cookie extraordinaire, I take pride in knowing what can make a cookie perfect and what can make....a cookie crumble! Cookies are my absolute favorite dessert, so I strive to learn how to make them exactly as they should be made! When it comes to sugar cookies, the key is in the center. A soft, chewy center can make or break a sugar cookie. A sugar cookie should also be made in the perfect circular shape, for all-round sweet deliciousness. Of all the sugar cookie recipes I have made and tried (of which there are MANY), I think I can happily say this is the perfect one!


Ingredients:

-2 large eggs + 1 egg yolk

-1 3/4 sticks unsalted butter (melted)(14 tablespoons)

-1 1/4 cup granulated sugar (+more for sprinkling)

-2 1/2 cups all-purpose flour

-1 teaspoon baking soda

-1/4 teaspoon baking powder

-2 1/2 teaspoons vanilla extract

-Pinch of salt


Directions: Yield 2-2.5 dozen cookies


Part 1:


-In a large mixing bowl, mix together melted butter and sugar

*It is important that the butter is completely melted before beginning

-Add in eggs and vanilla, mixing until mixture is yellow and smooth

-At once, add in flour, baking soda, baking powder, and a pinch of salt to the mixture. Mix until a consistent and clump free dough is formed

-Cover with plastic wrap or a tea towel and cool in refrigerator for 1-2 hours (or place in freezer for 10-15 minutes)

*This step is needed to make the dough cool and hard enough to shape


Part 2:

-Preheat oven to 350F degrees


-Line baking sheets with silicone mats or parchment paper

-Scoop out dough using a large spoon or tablespoon, but not completely filling either

-Roll dough into balls and place on prepared baking sheet. Once on the sheet press each dough ball down to slightly flatten, then turn over so top side is smooth

*At this point, the cookies should be the size of a gold/silver dollar

-Bake in oven for 10 minutes and take out BEFORE turning golden brown on edges

*Cookies should look slightly puffy in the center

-Once baked, take out of oven and lightly sprinkle each cookie with sugar. Let cool on tray for 2-3 minutes

-Using a spatula, move cookies to cooling rack to cool 5-10 more minutes

-Enjoy!
