Winter does not mean the wonderfully sweet, fruit-filled, citrus treats of the summer have to wait until the warm weather returns! In fact, baking a delicious treat can remind you of the season you are missing or the times you want to reminisce!
Ingredients:
-*1/3 cup butter, melted *
-1 cup granulated sugar
-3 tablespoons fresh lemon juice
-2 large eggs
-1 1/2 cup all-purpose flour
-1 teaspoon baking powder
-1/2 teaspoon salt
-*1/2 cup milk *
-1/4 teaspoon almond extract
-1 cup fresh or frozen blueberries
Directions: Yield 1 large loaf or 4-5 mini loaves
1) Preheat of to 350 F
2) In a large mixing bowl, mix together butter, sugar, lemon, and egg until well combined
3) Stir in flour, baking powder, and salt to wet ingredients
4) Mix in milk and almond extract
5) Fold in blueberries, until just combined
*If over folded, the blueberries will bleed and begin to change the color of the batter to a purple/gray
6) Generously spray an 8X4" or 4-5 mini loaf pans with cooking spray
7) Evenly spread the batter in the pan/s
8) Bake in oven for 60-70 minutes, until a toothpick can be inserted and removed cleanly
9) Cool for 10-15 minutes

** Vegan butter and non-dairy milk substitutes can be used as dairy alternatives, without any change to the texture, taste, or baking methods of the lemon blueberry bread!
