Summer is all about ice cream - all day, every day! Begin lactose intolerant can get in the way of enjoying all the summer ice cream fun. In the past year, there have been great strides in the lactose intolerant friendly freezer section of the grocery store. It went from one brand with one flavor of lactose free ice cream, to now I have too many choices! However, I still think making your own desserts is the way to go. Store bought ice cream often has too many additives and sweeteners that are in no way necessary. Besides, homemade ice cream is awesome!!! This ice cream is coconut based, but I found the coconut taste is hardly noticeable under the minty flavor! The best part about this homemade ice cream is that it is simple to make and lower in calories than most store bought ice cream!
Ingredients:
- 1 can (13.5-14 oz) condensed coconut milk
-1 tub (9 oz) cocowhip or cool whip type topping
-1 1/2- 2 teaspoons pure peppermint extract
-3/4 cup chocolate chips
-Green food dye (optional)
Directions: Yield 5-6 servings
-In a large bowl, whisk condensed coconut milk until frothy
-Add in cocowhip and whisk until well combined and bubbly
-Optional Step: add 4 drops of green food dye and fold in
-Pour in chocolate chips and mix well
*Most likely the majority of chips will fall to the bottom because of their density compared to the mixture
-In a freezer storage container, pour in ice cream and place in freezer
*You can leave it right side up and let the chocolate chips stay near the bottom, or flip it upside down so they lie at the top
-Freeze ice cream for 6+ hour
-Enjoy!
Notes:
So Delicious is the only brand I have found at the local grocery store that sells dairy free cool whip. It is coconut based and tastes great. If you are not lactose intolerant and can eat cool whip, you can use that if desired. Another possible option is to use 2 cans of lactose free whipped cream rather than the 1 container of coco whip.
Lactose free ice creams do no stay cold as long as other ice creams. Be aware that once out of the freezer, this ice cream can melt at a quick rate!
