If you were to ask me what types of cookies I like and which I don't, I would tell you there isn't a cookie in the world that I wouldn't enjoy! In essence, cookies are an essential part of my diet, with which I could not live without. Okay...MAYBE I would survive, but I would not be happy, that's for sure! Some cookies are good crispy, some cookies are better soft and chewy, some cookies are good fresh out of the oven, some cookies are perfect after being cooled, some cookies can be over baked, some cookies are best under baked; there are cookies that should be baked and eaten in all different ways. Snickerdoodles are a cookie best made and served warm, soft, and chewy. I have found that most cookies are good even if they're a bit crisp, but not snickerdoodles. You want to sink your teeth into snickerdoodles and taste their warm and soft cinnamon goodness! After experimenting, this is the recipe I came up with, that gives you exactly that!
Ingredients:
-1 3/4 stick unsalted butter, melted (14 tablespoons)
-2 large eggs
-1 cup granulated sugar
-2 1/4 teaspoon vanilla extract
-2 1/2 cup all-purpose flour
-1 teaspoon baking soda
-1/2 teaspoon baking powder
-1/2 teaspoon salt
Cinnamon sugar:
-1/3 cup granulated sugar
-2-2 1//2 tablespoon ground cinnamon
Directions: Yield 26-32 Medium Snickerdoodles
Part 1:
-In a mixing bowl, combine melted butter and sugar until gel-like in texture
-Add in eggs and vanilla, mixing until dark yellow, liquid is formed
-At once, stir in flour, salt, baking soda, and baking powder until well combined
-In a small bowl, mix together granulated sugar and cinnamon for cinnamon sugar
-Stir cinnamon sugar into batter, setting aside about 3 tablespoons for topping
-Place dough in fridge for 1-2 hours
Part 2:
-After 1-2 hours, preheat oven to 350F degrees
-Line baking sheet with a silicone mat, parchment paper,or cooking spray
-Using a tablespoon as your scooper, scoop out balls of dough, enough to fit in the tablespoon, but not much larger
-Roll dough into balls
-Place on baking sheet, and using your palm or a cup, slightly flatten the cookies into thin circles
-Sprinkle tops of cookies with the cinnamon sugar you set aside in part 1
-Bake in oven for 7-8
-Cool on cooling rack for 4-6 minutes
-Enjoy!
