Two of my favorite treats are chocolate and peanut butter, so what could be better than either of those? BOTH OF THEM TOGETHER! These brownies are amazing because the cake like texture is soft, light, and easy to eat. The peanut butter frosting is so simple, yet it takes peanut butter to a warm new level. These are great for an everyday dessert or for bringing to any type of party. They look great and taste amazing!
Ingredients:
Brownies:
-1 stick of unsalted butter (1/2 cup), melted
-4 large eggs
-1 1/2 cup granulated sugar
-2 cups all-purpose flour
-2/3 cup cocoa powder
-1 teaspoon baking powder
-3/4 teaspoon vanilla extract
-1/2 teaspoon almond extract
-2 tablespoons milk (2%, skim, almond, soy, coconut, etc.)
Peanut butter frosting:
-1/3 cup granulated sugar
-1/3 cup water
-1 1/2- 1 2/3 cup creamy peanut butter
Directions: Yield: 15-25 squares
Brownies:
-Preheat oven to 350 F degrees
-Generously spray the bottom and sides of a 9" X 13" baking pan with cooking spray
*spray well so brownies can be taken out easily
-In a large bowl, mix together flour, baking powder, and cocoa powder
-In a separate mixing bowl, mix together melted butter and eggs until well combined
*It is important that the butter is completely melted before combining with eggs
-Add in granulated sugar
-Mix in vanilla, almond extract, and milk
-Pour dry cocoa mixture into wet mixture and mix until well combined
*batter should be very fluffy, thick, and frosting like in texture
-Pour batter into prepared baking pan and spread evenly with a spatula
-Bake for 15-16 minutes (until a toothpick can be inserted and comes out clean)
-Let cool in pan for 10-15 minutes
Peanut butter frosting:
-In a medium saucepan, bring water and sugar to a boil
-Once boiling and bubbles begin to form rapidly, take off heat and immediately add in peanut, stirring until smooth and consistent in color and texture
-Let cool 1-2 minutes
Brownies+frosting:
-After brownies have cooled in pan, turn over onto a cooling rack of clean surface
-Once peanut butter frosting is ready, pour over brownies and spread evenly across top of brownie sheet
*make sure to spread frosting to all edges of the brownie sheet
*make a delicate design by smoothing out the frosting in up and down strokes across the brownies, leaving a swirled look
-Let frosting solidify on brownies by refrigerating for about 20 minutes
-Take out and cut into desired amount of evenly cut squares
-Enjoy!
Note: Brownies can be saved for 2-4 days if kept refrigerated
