Peanut Butter Banana Bread Muffins

Ingredients:
1 cup granulated sugar
8 tablespoons (1 stick) salted butter at room temperature
2 large eggs
3 ripe bananas
1 tablespoon milk (regular, soy, coconut, almond, etc.)
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon vanilla extract
1/2-1 cup creamy peanut butter
Directions: yield 24-36 large muffins
-Preheat oven to 350 F degrees
-In a large bowl, cream together sugar and butter until fluffy
-Add in eggs one at a time
-In a small bowl, mash bananas using a fork
-Mix milk, cinnamon, vanilla, and peanut butter in with the bananas
-Add flour, baking powder, and baking soda to the butter mixture
-Mix banana mixture in with flour/butter mixture
-Spray muffin tins with non-stick spray or place muffin cups in tins. Spoon batter into muffin tins up to halfway point
-Once all tins are filled, place in oven for 15-20 minutes. Poke center of muffins with a toothpick. If toothpick comes out clean, the muffins are done baking
-Take muffins out of tin to cool on a cutting board or cooling rack
-Enjoy!
