If you're thinking about something green for the upcoming holiday, or you're thinking about ice cream but you're tired of being cold, try mint chip cookies! These taste very similar to mint chip ice cream, but you do not have to eat it with a spoon, or hope that it doesn't melt you! These come out looking like small ice cream scoop puffs and stay soft after cooled.
Ingredients:
1 stick of butter (slightly melted)
1/4 cup packed brown sugar (light or dark)
3/4 cup granulated sugar
2 large eggs
2 cups all-purpose flour (plus more for coating)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon milk (soy, 2%, almond, coconut, etc)
1/2 teaspoon vanilla extract
1 1/2 teaspoon peppermint
3/4 cup chocolate chip (semi-sweet or milk chocolate)
green food coloring
Directions: yield 30-40 small cookies or 20-25 large cookies
Part 1:
-In a large bowl, mix together butter, brown sugar, and granulated sugar
-Once well combined, cream in eggs
-At once, stir in flour, baking powder, and baking soda
-Slowly pour milk, peppermint, and vanilla into dough
-Once all ingredients are fully mixed, add in green food coloring
*I use 5-6 drops of green food coloring
-Stir in chocolate chips
-Chill dough in refrigerator for 1-2 hours
Part 2:
-Once dough is chilled, preheat oven to 350 F degrees
-Line baking sheet with silicone mat or parchment paper
-Shape dough into small, round balls using a cookie scooper or a large spoon and hands
*Optional step: lightly coat cookie balls in flour or sugar to prevent sticking (I use flour)
-Bake for approximately 8 minutes (until puffy)
-Cool on cooling rack 5-10 minutes
-Enjoy!
