Meringue Cookies



Meringues are crunchy and airy cookies, made with superfine sugar and egg whites. Although they are considered cookies, they do not have butter, baking soda, baking powder, or flour in them. For this reason, they are very light cookies that are low in calories. As well as being gluten and dairy free! I like these cookies because they are easy and fun to make, as well as something you can get creative with. Add different flavors, different colors, and different toppings to make them your own!


Ingredients:

-3 egg whites

-1 cup superfine sugar

-1/2 teaspoon vanilla extract

-1/2 teaspoon cream of tartar

-Food coloring


Directions: Yield 10-20 cookies (depending on size)


-Preheat oven to 225F degrees

-Line a baking sheet with a silicone mat or parchment paper

-With a hand mixer or stand mixer, using the whisk attachment, whisk egg whites until bubbly

-Add in cream of tartar and mix until soft peaks form (about 5 minutes)

-In small increments, add in the sugar, while continually whisking

-Once all the sugar has been added, whisk until stiff peaks form

*This usually takes me about 6-10 minutes on high speed

*Batter should turn white in color at this point

-Using a spatula, fold in food coloring of choice, or leave white

-Using the piping tip of your choice (I use the 32 start tip), fill a pastry bag with batter and pipe out small, even, ice cream cone style swirls on your prepared baking sheet. Another option is to pipe out one big drop, which will form the pattern of your pipping tip in the center of each meringue

*Make sure a stiff peak is formed at the center of each cookie

-Optional step: sprinkle meringues with sprinkles, edible glitter, chocolate shreds, etc.

-Place in oven for 40 minutes (until dried and hollow to the touch)

-Remove from oven and left cool on baking sheet 5-7 minutes

-Place on cooling rack and continue to cool 15-30 minutes

-Enjoy!


Note: If you do not have superfine sugar, you can easily make a substitute. Simply measure out 1 cup of granulated sugar and blend it in a blender, mixer, or bullet machine, until it is white and powder like in texture!
