Green means healthy right?! These muffins aren't 100% healthy, but they taste good, they use real nuts, and they will make you happy when you eat them. In my book, that's what matters most!
Ingredients:
1/2 cup butter, softened
1/2 cup milk (1%, 2%, almond, coconut, soy, etc.)
2 large eggs
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
2 teaspoons baking powder
1/2 teaspoon flavoring of choice (almond extract, rum extract, brown sugar extract)
1 teaspoon vanilla extract
1 teaspoon lemon juice
1 1/3 cup all-purpose flour
2/3 cup granulated sugar (plus extra for dusting)
1/2 cup finely ground pistachios
Neon green food coloring or food gel
Directions: Yield 12-14 medium muffins
-Preheat oven to 375 F degrees and grease or line 12-14 muffin tins
- Combine flour, ground cinnamon, ground nutmeg, salt, baking powder, and pistachios in a large bowl
-In a mixing bowl, mix butter and sugar until creamy
-Beat in eggs one at a time
-Add in vanilla, flavoring of choice (I enjoy almond extract), and lemon juice
-Once light and well creamed, add in dry mixture 1/4 cup at a time, alternating with milk until all dry mixture and milk has been added
*be careful not to over mix the batter, try to only mix on low power or for a few spoon mixes between pours
-Add in enough green food coloring/gel to make batter the tint of green of your choosing
-Fill muffin tins nearly full and place in oven about 8 minutes
-At 8 minutes, pull muffins out to sprinkle tops with extra sugar, then place bake in over for 5-7 minutes more (until slightly golden on edges or a toothpick can be pulled out cleanly)
-Cool on cooling rack 15-20 minutes
-Enjoy!
*This recipe is a great idea for St. Patrick's day because it is fun and easy to make and eat, as well as having a super green color!
