Lemon Moon Cookies



When you think of the moon, do you think of a big giant sphere lighting up the night sky? Or perhaps do you think of lemon and marshmallow in yummy perfect bite sized circle with sugar craters? I know my mind definitely thinks lemon marshmallow goodness! Once you make these cookies, you'll be thinking the same way!


Ingredients:

-1/2 cup butter, soft (almost melted)

-1/2 cup granulated sugar

-1/4 cup brown sugar (lightly packed)

-1 large egg

-1/4 teaspoon vanilla extract

-1 3/4 cup all-purpose flour

-1/2 teaspoon baking soda

-1/2 teaspoon baking powder

-2 tablespoons lemon juice

-1 cup mini marshmallows


Directions: Yield about 30 cookies




-Cream together butter and sugars

-Add in vanilla and egg

-Add in flour, baking soda, and baking powder, mixing in all at once

-Stir in lemon juice

-Add mini marshmallows and mix in with a wooden spoon until they are soft and well combined

*this may take a minute or two- at first they will not seem to want to mix in with the dough

-Place dough in the refrigerator for 2 or more hours

-Preheat oven to 350 F degrees

-Line baking sheet with parchment paper or a silicone mat


-Once the dough is chilled, take out of the refrigerator, let sit for 5 minutes

-Roll dough into spoon sized balls

*while shaping, make sure that no marshmallows are on the bottom of the ball, where it will be placed on the baking sheet. Marshmallows expand in the oven, then deflate. They will stick to the bottom and melt

-Bake cookies for about 8 minutes

-Cool on cooling rack for 5 minutes

-Enjoy!
