Itty Bitty Mini M&M Cookies




If you can eat a cookie in two bites or less, that means you're allowed to eat more of them, right?! These cookies are the perfect mini treat to serve at big parties, bring to events, share with your friends, or have for yummy small snacks/ treats!


Ingredients:


3/4 cup unsalted butter, softened (nearly melted)

1 large egg

3/4 cup packed brown sugar (light or dark)

1/4 cup granulated sugar

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 cup mini m&ms



Directions: Yield 30-40 mini cookies


-Using a mixer, cream together sugars, butter, and vanilla until smooth

-Add in egg and continue to mix

-Turn off mixer and add in flour and baking soda, then put back on mixer

*I like to do this so the baking soda is well mixed with the flour

-Take bowl off of mixer

-Pour in m&ms and mix in with wooden spoon

-Place dough in fridge for 2-3 hours or freeze for 10+ hours

-Take dough out of fridge and let sit 5-10 minutes

*If dough was frozen, place in fridge for 2 hours before taking out to bake

-Preheat oven to 350 F degrees

-Line a baking sheet with a silicone mat or parchment paper

-Scoop out dough and roll into spoon sized balls

-Place on baking sheets with 1/2 inch to 1 inch between dough balls

-Bake about 10 minutes

*I like to take the cookies out a minute or two before they look finished. They will still be completely baked, but it gives them a perfect chew

-Let cool 2-5 minutes (just to settle)

-Enjoy!




Note: Although I mention needing a mixer for this recipe, it is not mandatory to use. These same steps can be done all with a wooden spoon or using a hand mixer. I like to use a stand mixer for this recipe because it gives the dough a thorough mixing and makes the dough smoother. If you are not using a stand mixer, just be sure to mix well!
