Ingredients:
8 ounces sharp cheddar cheese (or regular cheddar), finely grated
1 cup all-purpose flour
4 tablespoons (1/2 stick) unsalted butter, cut into small pieces
1/2 teaspoon Kosher salt (plus more for sprinkling)
1/4 teaspoon seasoned salt
Pinch of cayenne or garlic powder (optional)
3 tablespoons ice water
Directions: yield 80-100 Cheez-Its
-Put grated cheese, flour, butter, salts, and cayenne/garlic powder in a food processor and pulse until it is sand like in texture
*A blender or Nutribullet works just as well
-Add ice water and continue to pulse until dough begins to come together
-Shape dough into a ball, making sure all butter has been well blended
-Wrap in plastic wrap and refrigerate for 1 hour
-Preheat oven to 350 F degrees and line a baking sheet with a silicone baking mat or parchment paper
-Roll dough to 1/4 inch thick. Dough should roll out easily.
*Do not be afraid to roll thin, they will puff up in the oven
-Cut dough into squares using a pizza cutter or a serrated knife
-Poke the center of each square with the end of a chopstick, skewer, or toothpick
-Optional step: using a small knife dash all 4 edges of each square for an authentic Cheez-It look
-Place on baking sheet and sprinkle a small pinch of salt on each piece
-Bake for 12-15 minutes
-Cool on cooling rack and let Cheez-Its crisp before serving (10-20 minutes)
-Enjoy!
*I have not yet tried this recipe with other cheeses such as mozzarella or Colby-jack, but I will soon! Perhaps give it a try yourself!
