If you're looking for a tasty new bread to chop down on at lunch, well....here it is! I don't know about you, but I get pretty tired of plain old hoagies and sub sandwich bread pretty quickly. I feel as though there isn't much flavor and it doesn't add much to my sandwich. I came up with this recipe because I like when my bread has toppings, especially every topping! This bread is perfect for a few big veggie, cheese, meat sandwiches or it makes for great bread to go on the side of your salad, pasta, or soup. Give it a try and see what you think!
Ingredients:
Dough:
-4 cups all-purpose flour
-1 teaspoon salt
-1 package active dry/ instant yeast (2 1/4 teaspoon)
-1 1/4 cup warm water (80-100F degrees)
-1 1/2 tablespoon olive oil
Topping:
-olive oil
-1/2 tablespoon garlic salt
-1/2 tablespoon poppy seeds
-1/2 tablespoon sesame seeds
-1/2 tablespoon caraway seeds (optional)
Directions: Yield 3 sandwich loaves
Part 1:
-In a mixing bowl, stir together flour, salt, and yeast
-Using a bread hook, slowly add in olive oil and water, until shaggy dough is formed
-Place dough on floured surface and knead until smooth and elastic. DO NOT add extra flour beyond what covered the kneading surface (8-10 minutes)
-Generously oil the inside of a large bowl with olive oil, then place dough ball inside, turning to cover it with oil
-Tightly cover with plastic wrap and let rise in a warm place (8-18 hours), until doubled in size
Part 2:
-Preheat oven to 400F degrees
-Line a large baking sheet with a silicone mat or parchment paper
-Place dough on a lightly floured surface and cut into 3 equal pieces
- Shape each piece into a long rolls and place on parchment paper
-Using a basting brush, heavily cover each roll with olive oil
-Mix together garlic salt, poppy seeds, sesame seeds, and caraway seeds. Sprinkle each roll with mixture
-Place in oven for 15-20 minutes, until golden brown
-Cool on cooling rack for 15-20 minutes
-Pack with sandwich stuffings or eat plain
-Enjoy!
