This caramel corn is easy to make and doesn't involve baking. It only takes a few minutes to create and it's the perfect sugary treat for any occasion. Caramel corn is great for a party snack or whenever your sweet tooth is really screaming. This caramel corn is so addicting, I always have to have someone take it away from me, so that I don't eat it all at once!
Warning: You may want to watch for cavities after crunching on this!
Ingredients:
1 cup yellow popcorn kernels
Oil (coconut, olive, canola, avocado,etc)
1 cup brown sugar, packed (light or dark)
1 cup granulated sugar
2 sticks unsalted butter (16 tablespoons)
1/2 cup light corn syrup
1 teaspoon salt
1 teaspoon baking soda
1 drop of vanilla extract
Directions: Yield: 16-20 servings
Part 1:
-Pop popcorn over stove in a large pot with oil of choice, until all kernels seem to have popped
*coconut oil seems to work best for me and does not leave a distinct flavor
-Dump popcorn into a large aluminum steaming pan and take out all kernels and slightly popped popcorn
-Let cool while making the caramel topping
Part 2:
-In a large pot on the stove top, heat butter until melted
-Add in sugars, salt, and corn syrup until butter is fully combined (on heat 5 or 6)
-Once all ingredients are melted together and big bubbles begin to form in the center of the pot, set a timer for 5 minutes
-Let mixture simmer (without stirring) for those 5 minutes
-Once time runs out, take pot off heat and quickly add in baking soda and drop of vanilla, stirring until it is foamy
-Fold the caramel topping into the popcorn by pouring it over and using spoons or spatulas to mix it into the popcorn until all pieces are coated
*This step must be done quickly, because caramel topping will begin to harden almost instantly
-Break apart large chunks of popcorn, then let sit until completely cool (20-30 minutes)
-Enjoy!
Tips: Add in chocolate or nuts when mixing caramel in with popcorn for an even more desirable treat!
