This recipe is one that I have enjoyed since I was a little girl. This recipe belongs to my mother and has never disappointed. I love making it myself, but it still tastes best when mom makes!
Ingredients:
-1 cup granulated sugar
-8 tablespoons butter (1 stick), room temperature
-2 large eggs
-3 ripe bananas
-1 tablespoon milk (2%, soy, almond, cashew, etc)
-1 teaspoon ground cinnamon
-2 cups all-purpose flour
-1 teaspoon baking powder
-1 teaspoon baking soda
-1 teaspoon vanilla extract
Directions: Yield 1 large loaf or 2 small loaves
-Preheat oven to 325 F degrees
-Grease loaf pan(s)
-Cream together sugar and butter until fluffy
-Add in eggs, one at a time
-In a small bowl, mash bananas with a fork
-Mix in cinnamon, milk, and vanilla
-Add flour, baking powder, and baking soda to the butter mixture
-Add in banana mixture to butter-flour mixture
-Pour batter into loaf pan(s)
-Bake for 1 hour (until a toothpick can be inserted and come out clean)
-Cool on cooling rack for 15 minutes
-Enjoy!
Note: Add in 1/2-3/4 cup chocolate chips to the batter before putting in loaf pans for an extra sweet and delicious treat!
